    Commonly used in Chinese and Indian cooking, it's also popular in many other parts of Southeast Asia for savoury and sweet dishes. Any one of the following spices would contribute to a delicious dhal: cumin, ginger, turmeric, coriander, peppercorns, black mustard seeds, fennel, saffron and cardamom. Add more hot stock or water at the end of cooking for a soupier dish and throw in some green leaves like spinach and kale for texture. For variety, add some extra veg like diced carrots and celery as we do.  If you like a bit of crunch to accompany your dhal, then serve with our raw red cabbage salad.
