QUINOA BARS
Ingredients
- 2 cups puffed quinoa
- ½ cup oats
- 2 tablespoons chia seeds
- ¼ cup vanilla protein powder* {optional}
- ¼ cup rice malt syrup
- ½ cup coconut oil, melted

Quinoa is a gluten free and low GI seed that is grown in Bolivia, South America. It is eaten like a grain and it is a delicious addition to any healthy diet. It is also a good source of protein, fibre and contains a number of essential vitamins and minerals.
Method
Method:
In a large bowl, mix the quinoa, oats, chia, protein powder, rice malt syrup and coconut oil, and combine very well
Prepare a baking tray by lining it with baking paper
Pour the mixture onto the baking tray and spread it out into a slice shape until you have reached the desired thickness of the bars {I use my hands for this as it makes it easier}
Pop the baking tray in the freezer for 5 minutes
Remove, and slice into slices. Please note, you need to be extra careful when slicing as they are delicate
Pop the sliced bars back into the freezer for 5 or so minutes to fully set
Store in an airtight container in the freezer
* I add a handful of chopped incaberries berries to the mixture for an added sweet zing
*you could also drizzle with melted chocolate but remember to use a 70% cocao or more dark chocolate!
